Lime Cupcakes


After the forementioned hens night I ended up coming home with a bunch of limes. Because of the babybump I couldn't use these as intended: in a nice G&T or a cosmo, but they have still been calling out to me with their tangy greenness.

Today I succumbed. And baked.

This is actually a little victory for me as I have been struggling to muster up any inspiration to cook, and those who know me well know this to be crazy.

I adapted my already adapted orange cupcake recipie (originally from here) into a deliciously tangy lime cupcake with cream cheeze frosting from one of my favourite baking blogs: My Baking Addiction.

Lime Cupcakes

1 3/4 cup flour
2 teaspoons baking powder
1 cup sugar
100 grams of softened butter
1 teaspoon vanilla extract
3 eggs
1/2 cup lime juice
Zest of one lime

Get your oven on at 175 degrees. Mix dry ingredients. Separate eggs and beat whites till stiff peaks. Cream butter, sugar and vanilla. Add yolks one at a time. Add the flour and baking powder mix alternately with the lime juice and zest. Spoon the mixture into 12 cupcake papers. I do mine in a tin. Give about 20 minutes in the oven. Mine took 25, but then my cooker is slow.

The frosting is plain. Cream cheeze, butter and icing sugar. Opted out on the lime in it because my suspicion was that the cupcakes needed some sweetness to cut the tang of the lime (I was right). I halved Jamies recipie and added a little less icing sugar and still I have more than half of it left in my fridge.

They were tangy, but by biggest critic, Little man, loved them still. Especially the icing.

  1. Some kids love tangy foods...my grandkids eat yogurt and fruit smoothies that are so tart and tangy I can't help but scrunch up my face. Your Little Man looks very happy to be eating these!
